Ingredients
4 boneless, skinless chicken breasts (thin cut or butterflied)
8 oz cream cheese, softened (or light cream cheese)
1/2 cup mayonnaise
1 cup Colby Jack cheese, shredded (divided)
6 slices cooked bacon, crumbled
4 green onions, sliced
Salt and pepper, to taste
Instructions
Preheat oven to 350˚F (175˚C).
In a medium bowl, combine cream cheese, mayonnaise, half of the shredded Colby Jack cheese, bacon crumbles, and green onions until smooth.
Arrange chicken breasts in a baking dish in a single layer. Season lightly with salt and pepper.
Spread the cheese mixture evenly over the chicken.
Sprinkle the remaining shredded cheese on top.
Bake for 30-40 minutes or until the chicken reaches 165˚F internal temperature and cheese is golden and bubbly.
Garnish with extra bacon and green onions if desired. Serve hot!
Notes
Substitute boneless, skinless chicken thighs or tenderloins if preferred.
Light cream cheese works for a lower-fat version.
Cheddar or Mexican blend cheese can replace Colby Jack.
