Ingredients
-
8 oz goat cheese, softened
-
8 oz cream cheese, softened
-
2 tablespoons honey
-
6 slices bacon, cooked until crispy and finely chopped
-
½ cup pecans, finely chopped
-
⅓ cup dried cranberries, finely chopped
-
1 tablespoon fresh rosemary, minced
-
1–2 cups arugula, for garnish
-
Crackers or crostini, for serving
Instructions
-
In a medium bowl, combine softened goat cheese and cream cheese. Mix with a spatula or electric mixer on low until smooth and lump-free.
-
Add honey and fold gently into the cheese mixture, scraping down the sides as you go.
-
On a plate, mix the chopped bacon, pecans, dried cranberries, and minced rosemary. Blend well so the coating is evenly distributed.
-
Lay out a sheet of plastic wrap and shape the cheese mixture into a log, rolling it gently between your hands.
-
Place the cheese log onto the plate of coating mixture and roll until fully covered. Press lightly to help the mixture adhere.
-
Transfer the coated log to a serving platter and surround it with arugula for presentation and freshness.
-
Chill the log for at least 30 minutes to firm up and allow flavors to blend.
-
Slice and serve with crackers or crostini just before enjoying.
Notes
If the cheese mixture feels too soft to shape, chill it for 10–15 minutes before rolling.
Make this appetizer up to 24 hours ahead—just wrap tightly and chill until ready to serve.
For a nut-free version, replace pecans with crushed pretzels for crunch.
Don’t worry if the coating looks uneven; rustic is delicious!
