This Mediterranean Tzatziki Chicken Salad is a fresh, healthy, and protein-packed meal made with juicy shredded chicken, creamy Greek yogurt, and herby tzatziki sauce. It’s quick to prep and perfect for lunch, dinner, or meal prep!
Ingredients
2 cups cooked chicken breast, shredded
1 cup plain Greek yogurt
1 medium cucumber, finely grated and drained
2 tablespoons fresh dill, chopped
1 tablespoon fresh parsley, chopped
2 tablespoons lemon juice
2 cloves garlic, minced
1/4 cup red onion, finely diced
Salt and freshly ground black pepper, to taste
Optional for serving:
Mixed greens
Whole-grain crackers
Pita pockets
Instructions
In a large mixing bowl, combine Greek yogurt, grated cucumber, dill, parsley, lemon juice, and minced garlic. Stir until well combined.
Add shredded chicken and diced red onion to the bowl. Mix until everything is evenly coated.
Season with salt and freshly ground black pepper to taste.
Chill the salad in the fridge for at least 30 minutes to let flavors meld.
Serve over a bed of greens, in a pita pocket, or with crackers. Enjoy!
Notes
Use rotisserie chicken for a quick shortcut.
Be sure to squeeze the cucumber well to avoid watery salad.
Tastes even better after a few hours in the fridge!
