Description

Ingredients

  • 4 boneless, skinless chicken breasts (6–8 oz each)

  • 8 oz cream cheese, softened

  • 2 cups cooked spinach, chopped (fresh or frozen, water squeezed out)

  • 2 cloves garlic, minced

  • 1 cup shredded cheese (mozzarella, cheddar, or feta)

  • 1 tbsp fresh herbs, chopped (parsley, basil, or thyme)

  • Salt and pepper, to taste

For seasoning the chicken:

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder


Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Pound the chicken breasts between plastic wrap until ½ inch thick for even cooking.

  3. Make the filling: In a bowl, mix cream cheese, spinach, garlic, shredded cheese, herbs, salt, and pepper until well combined.

  4. Stuff the chicken: Add about ⅓ cup filling to the center of each breast. Fold the sides and roll tightly. Secure with toothpicks or kitchen twine.

  5. Season the outside: Brush with olive oil, then sprinkle with paprika, garlic powder, salt, and pepper.

  6. Bake seam-side down in a baking dish for 25–30 minutes, or until internal temp reaches 165°F (74°C).

  7. Rest and serve: Let rest for 5–10 minutes before removing toothpicks and serving.

Notes

Make ahead tip: Prepare the stuffed chicken in advance and refrigerate until ready to bake.
You can swap feta for goat cheese or ricotta for a different flavor twist.
Be sure to drain excess moisture from spinach to prevent a soggy filling.
