Ingredients
4 boneless, skinless chicken breasts (6–8 oz each)
8 oz cream cheese, softened
2 cups cooked spinach, chopped (fresh or frozen, water squeezed out)
2 cloves garlic, minced
1 cup shredded cheese (mozzarella, cheddar, or feta)
1 tbsp fresh herbs, chopped (parsley, basil, or thyme)
Salt and pepper, to taste
For seasoning the chicken:
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
Instructions
Preheat the oven to 375°F (190°C).
Pound the chicken breasts between plastic wrap until ½ inch thick for even cooking.
Make the filling: In a bowl, mix cream cheese, spinach, garlic, shredded cheese, herbs, salt, and pepper until well combined.
Stuff the chicken: Add about ⅓ cup filling to the center of each breast. Fold the sides and roll tightly. Secure with toothpicks or kitchen twine.
Season the outside: Brush with olive oil, then sprinkle with paprika, garlic powder, salt, and pepper.
Bake seam-side down in a baking dish for 25–30 minutes, or until internal temp reaches 165°F (74°C).
Rest and serve: Let rest for 5–10 minutes before removing toothpicks and serving.
