These Mediterranean Quesadillas are loaded with fresh spinach, creamy feta, gooey mozzarella, red onion, and tomatoes, all tucked inside golden, crispy tortillas. Quick, cheesy, and bursting with vibrant Mediterranean flavors — perfect for lunch, dinner, or an easy snack!
Ingredients
4 flour tortillas
1 cup fresh spinach, chopped
½ cup shredded mozzarella cheese
½ cup crumbled feta cheese
1 small tomato, diced
¼ cup red onion, thinly sliced
¼ teaspoon black pepper
1 tablespoon olive oil (for frying)
Instructions
In a mixing bowl, combine mozzarella, feta, chopped spinach, diced tomato, sliced red onion, and black pepper. Stir well.
Lay one tortilla flat. Spread one-fourth of the filling mixture over half of the tortilla.
Fold the tortilla over to create a half-moon shape.
Heat a large skillet or griddle over medium heat and add olive oil.
Place the folded tortilla in the pan and cook for 3–4 minutes per side, pressing gently with a spatula until golden brown and cheese is melted.
Remove from heat, cool slightly, then cut into wedges and serve warm.
Notes
Swap flour tortillas for whole wheat for added fiber.
Add olives, roasted peppers, or artichokes for extra Mediterranean flair.
Goat cheese works beautifully as a substitute for feta.
If some cheese oozes out while cooking, that’s just bonus crispy bits!
