Description

This Mediterranean Keto Ground Chicken Skillet with Olives and Feta is a quick and flavorful one-pan meal loaded with juicy tomatoes, briny olives, creamy feta, and fragrant herbs. Perfect for low-carb diets or anyone craving a vibrant, satisfying dinner in under 30 minutes!


Ingredients

  • 1 lb ground chicken

  • 1 cup cherry tomatoes, halved

  • ½ cup Kalamata olives, pitted and halved

  • ¾ cup feta cheese, crumbled

  • ¼ cup extra virgin olive oil

  • 1 medium red onion, finely chopped

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • ½ tsp dried basil

  • ¼ tsp red pepper flakes (optional)

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped red onion and sauté until translucent, about 3–4 minutes.

  2. Stir in minced garlic and cook for 1 minute until fragrant.

  3. Add ground chicken and cook, breaking it up with a spatula, until fully cooked and browned, about 5–7 minutes.

  4. Sprinkle in oregano, basil, red pepper flakes (if using), salt, and pepper. Stir well to coat the chicken.

  5. Add cherry tomatoes and Kalamata olives. Cook for another 5 minutes, until tomatoes begin to soften.

  6. Lower heat, sprinkle crumbled feta over the top, cover, and let sit for 2–3 minutes until feta starts to melt.

  7. Garnish with fresh parsley if desired and serve hot.

Notes

Swap ground chicken for ground turkey if preferred.
For extra richness, drizzle with a little more olive oil before serving.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
Great with cauliflower rice, zucchini noodles, or on its own!
