Juicy and flavorful, this Mediterranean Herb Crusted Grilled Chicken is marinated with lemon, garlic, and herbs for the perfect healthy dinner.
Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
2 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
2 cloves garlic, minced fine
1 tsp dried oregano (preferably Mediterranean oregano)
1 tsp dried basil
1/2 tsp dried thyme
1/2 tsp sweet paprika
1 tsp salt (or to taste)
1/2 tsp freshly ground black pepper
Instructions
In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, basil, thyme, paprika, salt, and black pepper.
Place chicken breasts in a resealable bag or shallow dish. Pour marinade over chicken and coat well. Massage gently to distribute flavors.
Cover and refrigerate for at least 30 minutes, or up to 24 hours for deeper flavor.
Preheat grill to medium-high heat. Clean and lightly oil the grates.
Remove chicken from marinade, discarding excess marinade.
Grill chicken for 6–7 minutes per side, or until internal temperature reaches 165°F (74°C).
Remove from grill and rest for 5 minutes before slicing. Serve warm with lemon.
Notes
Marinate longer for maximum flavor (overnight is best).
No grill? Use a grill pan or broiler for similar results.
Pairs perfectly with roasted vegetables, Greek salad, or orzo pasta.
