Description

A quick and flavorful Mediterranean Ground Beef Stir-Fry made with lean ground beef, fresh veggies, herbs, and crumbled feta. Perfect for busy weeknights!


Ingredients

Scale
  • 1 lb ground beef (90% lean; drain if using 80%)

  • 1 red bell pepper, sliced

  • 2 cups baby spinach (or kale/Swiss chard)

  • 1 cup cherry tomatoes, halved

  • 2 cloves garlic, minced

  • 3 green onions, sliced (separate white and green parts)

  • 1 teaspoon dried oregano

  • Salt and black pepper, to taste

  • 2 tablespoons olive oil

  • ½ cup crumbled feta cheese (optional, for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add cherry tomatoes and bell pepper, sauté for 4–5 minutes until tomatoes blister. Stir in garlic for 1 minute.

  3. Add spinach and white parts of green onions; cook 2–3 minutes until spinach wilts. Transfer veggies to a plate.

  4. In the same skillet, add ground beef, oregano, salt, and pepper. Cook until browned, breaking up meat. Drain excess liquid if needed.

  5. Return veggies to skillet, stir in green parts of green onions, and combine well.

  6. Garnish with crumbled feta before serving.

Notes

Swap ground beef for turkey or chicken for a lighter option.
A squeeze of lemon at the end brightens the flavors.
Serve over rice, quinoa, or stuffed into pita bread for a complete meal.
