Description
A quick and flavorful Mediterranean Ground Beef Stir-Fry made with lean ground beef, fresh veggies, herbs, and crumbled feta. Perfect for busy weeknights!
Ingredients
-
1 lb ground beef (90% lean; drain if using 80%)
-
1 red bell pepper, sliced
-
2 cups baby spinach (or kale/Swiss chard)
-
1 cup cherry tomatoes, halved
-
2 cloves garlic, minced
-
3 green onions, sliced (separate white and green parts)
-
1 teaspoon dried oregano
-
Salt and black pepper, to taste
-
2 tablespoons olive oil
-
½ cup crumbled feta cheese (optional, for garnish)
Instructions
-
Heat olive oil in a large skillet over medium heat.
-
Add cherry tomatoes and bell pepper, sauté for 4–5 minutes until tomatoes blister. Stir in garlic for 1 minute.
-
Add spinach and white parts of green onions; cook 2–3 minutes until spinach wilts. Transfer veggies to a plate.
-
In the same skillet, add ground beef, oregano, salt, and pepper. Cook until browned, breaking up meat. Drain excess liquid if needed.
-
Return veggies to skillet, stir in green parts of green onions, and combine well.
-
Garnish with crumbled feta before serving.
Notes
Swap ground beef for turkey or chicken for a lighter option.
A squeeze of lemon at the end brightens the flavors.
Serve over rice, quinoa, or stuffed into pita bread for a complete meal.
