These Mediterranean Chicken Patties are juicy, herby, and full of flavor thanks to fresh parsley, mint, lemon zest, and a hint of feta. Ingredients
1 lb ground chicken (preferably a mix of lean and some fat)
1 small red onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
2 tbsp fresh mint, chopped
1 tsp dried oregano
Zest from 1 lemon
1 egg, lightly beaten
1/2 cup breadcrumbs (panko or regular)
1/4 cup feta cheese, crumbled (optional)
Salt and pepper to taste
Olive oil, for cooking
Instructions
Prepare the mixture: In a large bowl, combine ground chicken, red onion, garlic, parsley, mint, and oregano. Add lemon zest, egg, breadcrumbs, and feta (if using). Season with salt and pepper. Mix gently until well combined—don’t overmix!
Form the patties: Divide the mixture into 6–8 equal portions and shape each into a 1/2-inch thick patty.
Cook the patties: Heat a drizzle of olive oil in a skillet over medium-high heat. Cook patties for 4–5 minutes per side, or until golden brown and internal temp reaches 165°F. Cook in batches if needed.
Serve: Transfer patties to a plate and serve warm with tzatziki, salad, or pita.
Notes
Don’t overmix the patty mixture or they’ll turn out dense.
Feta is optional but adds a creamy, salty flavor.
Make ahead tip: shape the patties a day in advance and refrigerate until ready to cook.
