Description

This Mediterranean Baked Salmon With Feta & Sun-Dried Tomatoes is a vibrant, flavor-packed dinner that comes together quickly with fresh herbs, savory feta, and juicy sun-dried tomatoes. Tender, flaky salmon meets bold Mediterranean ingredients for a simple but unforgettable meal perfect for busy weeknights or special gatherings.


Ingredients

  • 4 salmon fillets (6 oz each)

  • 1 cup crumbled feta cheese (about 6 oz)

  • ½ cup sun-dried tomatoes, chopped

  • ¼ cup olives, pitted and sliced (optional)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine feta, sun-dried tomatoes, olives (optional), olive oil, garlic, oregano, salt, and pepper. Mix well.

  3. Place the salmon fillets in a baking dish, skin-side down, and season with salt and pepper.

  4. Spoon the feta and sun-dried tomato mixture evenly over each fillet.

  5. Cover the baking dish with aluminum foil to keep the salmon moist.

  6. Bake for 15 minutes, then remove the foil and bake an additional 10 minutes or until the salmon flakes easily with a fork.

  7. Remove from the oven and garnish with fresh parsley before serving.

Notes

  • For extra flavor, use sun-dried tomatoes packed in oil.

  • Add a squeeze of lemon before serving for brightness.

  • Broil for 1–2 minutes at the end if you prefer a lightly caramelized topping.
