Ingredients

Scale
  • 1 pound ground beef

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 (8 oz) package cream cheese, softened

  • 1 cup sour cream

  • 1 (10 oz) can diced tomatoes with green chiles, drained

  • 1 (15 oz) can refried beans

  • 2 teaspoons chili powder

  • 1 teaspoon cumin

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 cups cheddar cheese, shredded

  • 1/2 cup green onions, chopped (for garnish)

  • Tortilla chips, for serving

Instructions

  1. Preheat and Prep:
Preheat your oven to 350°F (175°C). Lightly grease a medium baking dish.

  2. Cook the Beef:
In a large skillet over medium heat, brown the ground beef with diced onion and garlic until cooked through. Drain excess grease.

  3. Add the Creamy Ingredients:
Lower the heat and stir in the cream cheese and sour cream. Mix until smooth and well combined.

  4. Add Remaining Ingredients:
Stir in diced tomatoes with green chiles, refried beans, chili powder, cumin, salt, and pepper. Combine everything evenly.

  5. Transfer and Bake:
Spread the mixture into the baking dish. Top with shredded cheddar cheese.

  6. Bake to Perfection:
Bake for 20–25 minutes, until the cheese is melted and bubbly.

  7. Garnish and Serve:
Sprinkle with chopped green onions. Serve hot with tortilla chips!

Notes

Want to spice it up? Add jalapeños or a dash of hot sauce.
Make ahead: Assemble the dip and refrigerate—just bake when you’re ready to serve.
Leftovers make a great taco filling or baked potato topper!
