Ingredients
1 lb chicken breast or thighs, cubed
1 tablespoon olive oil
1 tsp Italian seasoning (divided)
1 cup chopped onions
1/2 cup chopped carrots
1/2 cup chopped celery
1/4 cup sun-dried tomatoes, chopped
3 garlic cloves, minced
2 tablespoons all-purpose flour
4 cups chicken broth
1 cup heavy cream
2 cups spinach (fresh)
1/2 cup grated Parmesan cheese
1 ½ cups cheese tortellini (fresh or refrigerated)
Salt and black pepper to taste
Instructions
In a large soup pot or Dutch oven, heat olive oil over medium-high heat.
Add cubed chicken and ½ tsp Italian seasoning. Cook until browned and fully cooked through. Remove and set aside.
In the same pot, add onions, carrots, celery, sun-dried tomatoes, and garlic. Cook for 4–5 minutes, until veggies soften.
Sprinkle in the flour and stir to coat everything evenly.
Slowly whisk in the chicken broth, stirring constantly to avoid lumps.
Bring to a gentle simmer. Add the tortellini, remaining Italian seasoning, salt, and pepper. Simmer for 15–20 minutes.
Return the cooked chicken to the pot. Stir in heavy cream, spinach, and Parmesan. Simmer another 5–7 minutes, until spinach is wilted and soup is creamy.
Taste and adjust seasoning. Serve hot with crusty bread or garlic toast!
Notes
Shortcut tip: Use Trader Joe’s Mirepoix mix and pre-peeled garlic to save prep time.
Tortellini: Use refrigerated cheese tortellini for best texture.
Make it spicy: Add red pepper flakes if you want a little heat.
