Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tbsp olive oil
3 cloves garlic, minced
½ cup chicken broth
¾ cup heavy cream
½ cup grated Parmesan cheese
½ tsp red pepper flakes
½ tsp dried oregano
½ tsp dried thyme
⅓ cup sun-dried tomatoes, chopped (packed in oil)
Fresh basil, for garnish
Instructions
Sear the Chicken:
Season both sides of chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Sear chicken for about 5 minutes per side until golden brown. Remove and set aside.Make the Sauce:
In the same skillet, add minced garlic and sauté until fragrant (about 30 seconds). Stir in chopped sun-dried tomatoes and cook briefly. Pour in chicken broth and scrape up any browned bits from the pan. Lower heat to medium, add heavy cream and Parmesan, and stir until smooth and slightly thickened. Sprinkle in red pepper flakes for a hint of heat.Finish Cooking:
Return chicken to the skillet, spoon sauce over each piece. Cover and simmer for 10 minutes, or until chicken reaches an internal temperature of 165°F. Garnish with fresh basil and serve.
Notes
Adjust red pepper flakes to your desired heat level.
Add a splash of extra chicken broth or cream if sauce thickens too much.
Perfect served over pasta, rice, or with crusty bread to soak up the sauce.
Chicken thighs can be substituted for breasts for extra juiciness.
