Ingredients
Main Ingredients
-
2.2 lbs (1 kg) chicken leg quarters
-
3 oranges, thinly sliced
-
4 sprigs fresh thyme
Marinade
-
Juice of 2 oranges
-
¼ cup olive oil
-
½ cup pure maple syrup
-
⅓ cup soy sauce or tamari
-
1 teaspoon red chili flakes
Instructions
-
In a large bowl, whisk together orange juice, olive oil, maple syrup, soy sauce, and red chili flakes until smooth.
-
Add chicken leg quarters and turn to coat evenly. Cover and refrigerate for at least 4 hours, preferably overnight.
-
Preheat oven to 390°F (200°C). Line a large baking pan with parchment paper.
-
Arrange half of the orange slices on the pan. Place marinated chicken on top, skin side up.
-
Pour remaining marinade over the chicken and scatter remaining orange slices and thyme around the pan.
-
Loosely cover with damp parchment paper and bake for 1 hour.
-
Remove cover, spoon pan juices over chicken, and bake uncovered for 15 minutes until golden and caramelized.
-
Let rest for 5 minutes before serving. Spoon glaze over the chicken and garnish with herbs.
Notes
For gluten-free, use tamari instead of soy sauce.
Use real maple syrup for best flavor and caramelization.
Leftovers keep well refrigerated for up to 3 days.
Pairs beautifully with roasted vegetables, mashed potatoes, or a crisp winter salad.
