Ingredients
Chicken Marinade:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
Parmesan Crust:
1/2 cup Parmesan cheese, grated
1/4 cup Provolone cheese, shredded
1/2 cup panko breadcrumbs
2 tablespoons butter, melted
2 tablespoons mayonnaise
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Instructions
Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic powder, onion powder, paprika, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes (up to 4 hours for best flavor).
Grill the Chicken: Preheat grill or grill pan to medium-high heat. Grill chicken 5–6 minutes per side until internal temperature reaches 165°F. Transfer to a foil-lined baking sheet.
Make the Parmesan Crust: Mix Parmesan, Provolone, panko breadcrumbs, melted butter, mayonnaise, Italian seasoning, and garlic powder in a bowl to form a thick paste.
Top the Chicken: Spread the Parmesan crust mixture evenly on each chicken breast, pressing lightly to adhere.
Bake and Broil: Bake at 400°F for 5–7 minutes until cheese melts and browns. Broil for an additional 1–2 minutes for a crispier top if desired.
Notes
Marinate longer for more flavor.
Use a cast iron skillet if you don’t have a grill.
Mozzarella can substitute for provolone if needed.
