Description

This Loaded Grilled Chicken on the Griddle is a cheesy, savory, and smoky masterpiece that brings together juicy chicken breasts, crispy bacon, sautéed mushrooms, and a sweet-tangy honey mustard sauce. Perfect for griddle cooking and sure to be a family favorite!


Ingredients

  • 4 boneless skinless chicken breasts (or substitute thighs)

  • 6 slices bacon, cooked and chopped

  • 1 cup shredded cheese (Colby Jack + Pepper Jack recommended)

  • 1 cup sliced mushrooms

  • ½ cup mayonnaise

  • 2 tablespoons Dijon mustard

  • 2 tablespoons honey

  • 1 tablespoon lemon juice

  • Salt and pepper, to taste

  • 2 green onions, sliced (optional garnish)

  • 1 tablespoon cooking oil (for mushrooms)


Instructions

  1. In a large bowl, whisk together the mayonnaise, Dijon mustard, honey, lemon juice, and a pinch of salt and pepper. Reserve ½ cup of the sauce for topping.

  2. Pound the thicker parts of the chicken breasts for even cooking. Coat them in the remaining sauce mixture.

  3. Preheat the griddle to 350–375°F.

  4. Grill the chicken on one side for 6–8 minutes without moving. Flip and cook for another 5–6 minutes or until internal temp reaches 160°F.

  5. On another part of the griddle, heat oil and sauté mushrooms until browned. Season lightly with salt and pepper.

  6. Top each chicken breast with mushrooms, reserved sauce, shredded cheese, chopped bacon, and green onions.

  7. Cover with a melting dome or tent foil until cheese melts and internal temperature reaches 165°F.

  8. Serve warm with extra sauce on the side.

Notes

  • Freshly grated cheese melts smoother and adds better flavor than pre-shredded.

  • Use a wire rack or melting dome for even heat and quicker cheese melting.

  • Swap in chicken thighs if you prefer a juicier cut.
