This Lemon Ginger Soy Marinated Grilled Chicken is juicy, zesty, and packed with bold flavor from fresh ginger, garlic, lemon juice, and soy sauce. It’s an easy and healthy dinner option that comes together with minimal prep and delivers major taste with every bite!
Ingredients
1/4 cup lemon juice
1/4 cup soy sauce
2 tablespoons olive oil
2 tablespoons minced fresh ginger
2 medium garlic cloves, minced
2 tablespoons minced fresh parsley
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1–1/2 lbs boneless skinless chicken thighs or breasts
Instructions
In a large bowl, whisk together lemon juice, soy sauce, olive oil, ginger, garlic, parsley, salt, and pepper until well combined.
Place the chicken in a sealable bag or bowl and pour the marinade over it. Seal or cover, then refrigerate for at least 2 hours or up to 12.
Preheat grill to medium-high heat. Remove chicken from marinade and pat dry with paper towels. Discard excess marinade.
Grill the chicken, turning occasionally, until it reaches an internal temperature of 165°F and has nice grill marks (about 5–7 minutes per side).
Remove from grill, let rest for a few minutes, and serve warm with lemon wedges if desired.
Notes
For extra tenderness, marinate overnight.
Don’t skip patting the chicken dry—it helps with browning and prevents sticking.
You can use chicken breasts or thighs, but thighs tend to stay juicier on the grill.
