Description

Ingredients

  • 🍗 Chicken breast (boneless, skinless) – 2, diced
  • 🥤 Chicken broth – 3 cups
  • 🍋 Lemon juice – 1/4 cup (freshly squeezed)
  • 🧈 Butter – 2 tbsp
  • 🧄 Garlic cloves – 2, minced
  • 🌿 Parsley – 2 tbsp, chopped
  • 🧀 Parmesan cheese – 1/4 cup, grated
  • 🍅 Cherry tomatoes – 1 cup, halved
  • 🥄 Olive oil – 2 tbsp
  • Orzo pasta – 1 cup
  • Salt and pepper – To taste

Instructions

 

  • Heat olive oil in a skillet over medium heat. Add chicken and cook until golden and cooked through. Set aside.
  • In the same skillet, melt butter and sauté garlic until fragrant.
  • Add orzo and toast lightly for 1-2 minutes.
  • Pour in chicken broth and bring to a boil. Reduce heat and simmer until orzo is al dente, about 10 minutes.
  • Stir in lemon juice, cooked chicken, cherry tomatoes, and parsley. Cook until heated through.
  • Finish with Parmesan cheese, season with salt and pepper, and garnish with extra parsley before serving.
