Ingredients
- 🍗 Chicken breast (boneless, skinless) – 2, diced
- 🥤 Chicken broth – 3 cups
- 🍋 Lemon juice – 1/4 cup (freshly squeezed)
- 🧈 Butter – 2 tbsp
- 🧄 Garlic cloves – 2, minced
- 🌿 Parsley – 2 tbsp, chopped
- 🧀 Parmesan cheese – 1/4 cup, grated
- 🍅 Cherry tomatoes – 1 cup, halved
- 🥄 Olive oil – 2 tbsp
- Orzo pasta – 1 cup
- Salt and pepper – To taste
Instructions
- Heat olive oil in a skillet over medium heat. Add chicken and cook until golden and cooked through. Set aside.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Add orzo and toast lightly for 1-2 minutes.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer until orzo is al dente, about 10 minutes.
- Stir in lemon juice, cooked chicken, cherry tomatoes, and parsley. Cook until heated through.
- Finish with Parmesan cheese, season with salt and pepper, and garnish with extra parsley before serving.
