Description

This Lemon Chicken and Veggie Orzo Stir Fry is a zesty, wholesome one-pan meal packed with tender chicken, colorful veggies, and bright lemon flavor. Perfect for busy weeknights and picky eaters alike!


Ingredients

  • 1 cup orzo pasta

  • 2 tablespoons olive oil

  • 1 pound chicken breast, diced

  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 zucchini, diced

  • 1 red bell pepper, diced

  • 1 cup broccoli florets

  • 2 tablespoons lemon juice

  • 1 teaspoon lemon zest

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon red pepper flakes (optional)

  • 1/4 cup grated Parmesan cheese

  • Fresh parsley for garnish


Instructions

  1. Cook the orzo in salted water according to package directions. Drain and set aside.

  2. In a large skillet, heat 1 tablespoon olive oil over medium heat.

  3. Add diced chicken, garlic powder, salt, and pepper. Sauté until golden and cooked through (6–7 minutes). Remove from skillet.

  4. Add remaining olive oil and sauté zucchini, red bell pepper, and broccoli until tender (about 5–6 minutes).

  5. Return chicken to the skillet along with cooked orzo.

  6. Stir in lemon juice, lemon zest, oregano, and red pepper flakes. Toss well to combine.

  7. Add Parmesan cheese and stir until melted.

  8. Garnish with fresh parsley and serve warm.

Notes

Add a splash of chicken broth or cream for extra sauciness.
Swap orzo for rice or quinoa if desired.
For extra veggies, toss in spinach or peas at the end.
Store leftovers in the fridge for up to 3 days.
