This Lemon Balsamic Chicken and Potatoes recipe is a bold and zesty one-pan dinner that’s perfect for busy weeknights. Juicy chicken, crispy baby potatoes, tangy balsamic, and fresh herbs come together effortlessly in under 30 minutes—family-friendly and full of flavor!


Ingredients

    • 1 pound baby potatoes, halved

    • 4 tablespoons + 1/3 cup extra virgin olive oil

    • Salt and black pepper, to taste

    • 6 boneless skinless chicken breasts or thighs

    • 2 tablespoons balsamic vinegar

    • 2 tablespoons Dijon mustard

    • 1 tablespoon fresh chopped oregano

    • 2 teaspoons smoked or regular paprika

    • 6 garlic cloves, chopped

    • 1 shallot, chopped

    • Chili flakes, to taste

    • 2 tablespoons lemon juice

    • 1 cup mixed chopped fresh herbs (dill, basil, or thyme)

    • 2 tablespoons sliced pepperoncini

    • 1 cup green olives, torn

    • 2 tablespoons sesame seeds

Feta Sauce:

    • 1 cup Tzatziki sauce

    • 6 ounces feta cheese, crumbled


Instructions

  1. Preheat oven to 425°F.

  2. On a baking sheet, toss the baby potatoes with 2 tablespoons olive oil. Season with salt and pepper.

  3. In a bowl, mix 2 tablespoons olive oil, chicken, balsamic vinegar, Dijon mustard, oregano, paprika, garlic, shallot, salt, pepper, and chili flakes.

  4. Nestle the marinated chicken between the potatoes on the sheet pan.

  5. Bake for 25–30 minutes, or until chicken is cooked through and potatoes are golden and crispy.

  6. While baking, mix the remaining 1/3 cup olive oil, lemon juice, fresh herbs, pepperoncini, olives, and sesame seeds in a bowl.

  7. Combine Tzatziki and feta in a separate bowl for the creamy sauce.

  8. Once out of the oven, spoon the herby olive mixture over the chicken and potatoes.

  9. Serve hot with a generous dollop of the feta sauce. Enjoy!
