Description

This Key Lime Pie Yogurt Bark (High Protein) is a creamy, tangy, freezer-friendly treat made with Greek yogurt, fresh key lime juice, and a crunchy graham cracker topping. It tastes like key lime pie but doubles as a healthy snack or light dessert. Perfect for meal prep, busy afternoons, or when you want something sweet without turning on the oven.

Ingredients

Scale
  • 2 cups plain Greek yogurt (non-fat or low-fat)
  • 23 tablespoons key lime juice (adjust to taste)
  • 1 scoop vanilla protein powder (regular or dairy-free)
  • 23 tablespoons powdered Swerve (or honey/maple syrup to taste)
  • ½ teaspoon vanilla extract
  • 1 teaspoon lime zest (plus extra for topping)
  • ¼ cup graham cracker crumbs (gluten-free or regular)
  • 2 tablespoons toasted coconut flakes (unsweetened)

Instructions

  1. In a medium mixing bowl, combine Greek yogurt, key lime juice, protein powder, powdered sweetener, vanilla extract, and lime zest. Mix until smooth and creamy.
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Spread the yogurt mixture evenly into a thin layer (about ¼-inch thick).
  4. Sprinkle graham cracker crumbs, toasted coconut flakes, and extra lime zest evenly over the top.
  5. Freeze for 2–3 hours, or until fully set and firm.
  6. Remove from freezer and break into pieces using your hands or a sharp knife.
  7. Serve immediately or store in an airtight container in the freezer.

Notes

  • For extra tang, add more lime zest.
  • For extra sweetness, adjust sweetener to taste before freezing.
  • Let the bark sit at room temperature for 1–2 minutes before eating for the best texture.
  • Store in a single layer or between parchment sheets to prevent sticking.
  • Keeps well in the freezer for up to 2 weeks.
