This Keto Jalapeno Popper Casserole is the ultimate low-carb comfort food—creamy, cheesy, and loaded with bacon and jalapeños. Perfect for weeknights, meal prep, or any time you’re craving bold flavor without the carbs!


Ingredients

  • 3 to 4 boneless, skinless chicken breasts, cubed

  • ½ tablespoon garlic powder

  • 8 oz cream cheese, softened

  • ½ cup heavy cream

  • 5 to 6 jalapeño peppers, seeded and diced

  • 2 cups shredded sharp cheddar cheese

  • 6 slices bacon, chopped and cooked until crispy


Instructions

  1. Preheat oven to 375°F. Spray a 9×13 casserole dish with nonstick cooking spray.

  2. Arrange cubed chicken in a single layer across the bottom of the dish, leaving small gaps between pieces.

  3. In a bowl, mix softened cream cheese, garlic powder, and heavy cream until smooth.

  4. Pour the cream cheese mixture over the chicken, spreading evenly.

  5. Sprinkle diced jalapeños on top, followed by shredded cheddar cheese.
