Description
This Keto Chicken Parmesan Casserole is a cheesy, comforting, and low-carb dinner packed with tender chicken, marinara, and crispy parmesan topping.
Ingredients
4 cups cubed rotisserie chicken or chicken breast, cooked
3/4 cup no sugar added marinara sauce
1 tbsp Italian seasoning
2 garlic cloves, minced
1 tbsp olive oil
2 tbsp almond flour
3/4 cup grated parmesan cheese
1 1/2 cups shredded mozzarella cheese
3/4 cup finely crushed parmesan crisps or pork rinds
Non-stick cooking spray
Instructions
Preheat oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, about 1 minute.
Stir in Italian seasoning, marinara sauce, almond flour, and cooked chicken. Simmer for 5 minutes.
Spray a 9×13” casserole dish with non-stick spray. Pour in the chicken mixture.
Top evenly with parmesan cheese, mozzarella, and crushed parmesan crisps or pork rinds.
Bake for 25–30 minutes, until hot and bubbly with melted cheese.
Let cool slightly before serving.
Notes
You can substitute pork rinds with more parmesan crisps if preferred.
Store leftovers in an airtight container for up to 4 days.
Add red pepper flakes or sautéed spinach for a flavorful twist.
