Description

This Keto Chicken Bacon Ranch Casserole is creamy, cheesy, and packed with tender chicken, broccoli, and crispy bacon. It’s an easy low-carb comfort dinner that’s perfect for busy weeknights and loved by the whole family.

  • 2 cups broccoli florets

  • pounds boneless, skinless chicken breast, cut into bite-sized pieces

  • 2 teaspoons minced garlic

  • 2 tablespoons olive oil

  • 1 teaspoon dried parsley

  • ¾ teaspoon dried chives

  • ¾ teaspoon dried dill weed

  • ¾ teaspoon garlic powder

  • ½ teaspoon onion powder

  • 1 cup heavy whipping cream

  • 1 cup shredded cheddar cheese, divided

  • ½ cup shredded mozzarella cheese

  • 4 slices bacon, cooked and crumbled

  • 2 tablespoons grated Parmesan cheese

  • Salt and pepper, to taste


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch casserole dish.

  2. Bring a pot of water to a boil, add broccoli, and blanch for 5 minutes. Drain and rinse with cold water. Spread broccoli evenly in the casserole dish.

  3. In a bowl, toss chicken with parsley, chives, dill, garlic powder, and onion powder.

  4. Heat olive oil in a skillet over medium-high heat. Add chicken and cook until fully done.

  5. Add minced garlic and sauté for 30 seconds until fragrant. Transfer chicken to the casserole dish.

  6. Reduce heat to medium and pour heavy cream into the same skillet, scraping up browned bits.

  7. Simmer for a few minutes until slightly thickened, then stir in ½ cup cheddar cheese and mozzarella. Season with salt and pepper.

  8. Pour cheese sauce over chicken and broccoli, tossing gently to coat.

  9. Sprinkle remaining cheddar cheese on top, followed by bacon and Parmesan.

  10. Bake for 20 minutes until bubbly and lightly browned.

  11. Let rest for 5 minutes before serving.

Notes

You can replace the dried herbs and spices with 1 heaping tablespoon ranch seasoning mix for extra flavor.

For best texture, avoid overcooking the broccoli before baking.
