Description

This Keto Broccoli and Cauliflower With Sausage is a creamy, low-carb comfort dish loaded with tender veggies, smoky sausage, and a rich cheddar cheese sauce. Easy, hearty, and perfect for weeknight dinners.

Ingredients

Scale

Vegetables

  • 3 cups cauliflower florets

  • 3 cups broccoli florets, lightly steamed

Sausage

  • 12 oz sliced smoked sausage

Cheese Sauce

  • 2 tablespoons butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 4 oz cream cheese, softened

  • 1 cup heavy whipping cream

  • 1 ½ cups shredded cheddar cheese

  • Salt & pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Heat a skillet over medium-high and sauté sliced smoked sausage for 5–7 minutes until browned. Set aside.

  3. In a medium pot, melt butter over medium heat.

  4. Add diced onion and cook for 3–4 minutes, until soft and translucent.

  5. Stir in minced garlic and cook 30 seconds until fragrant.

  6. Add softened cream cheese and stir until melted.

  7. Slowly pour in heavy whipping cream, whisking until smooth. Simmer for 3–5 minutes until thickened.

  8. Add shredded cheddar cheese and stir until creamy. Season with salt and pepper.

  9. In a large bowl, combine broccoli, cauliflower, and sausage. Pour cheese sauce over the mixture and toss to coat.

  10. Transfer to a 9×9 baking dish and bake for 15–20 minutes, until bubbling and golden.

Notes

  • Lightly steaming the broccoli helps keep it crisp and prevents a watery casserole.

  • For a crispier top, broil for the last 2–3 minutes.

  • You can swap cheddar with Monterey Jack, Gouda, or a blend for extra flavor.

  • Make it vegetarian by omitting the sausage.
