Chicken:

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

Jalapeno Peach Sauce:

  • 2 cups fresh peaches, peeled and diced

  • 2 fresh jalapeños, seeded and finely chopped

  • 1/2 cup red onion, finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup honey

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon soy sauce

  • 1 tablespoon fresh lime juice

  • 1 tablespoon olive oil

  • Salt and pepper to taste


Instructions

  1. Pat chicken breasts dry and rub with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika.

  2. Heat a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden and fully cooked. Remove and set aside.

  3. In the same skillet, add a bit more olive oil. Sauté red onion for 2–3 minutes, then add garlic and jalapeños for another minute.

  4. Stir in peaches, honey, apple cider vinegar, soy sauce, and lime juice. Season with salt and pepper. Let it simmer for 6–8 minutes until slightly thickened.

  5. Return chicken to skillet and spoon sauce over the top. Simmer for 3–5 minutes until everything is well coated and heated through.

  6. Serve hot over rice, quinoa, or mashed potatoes.

Notes

Adjust the spice by using more or fewer jalapeños.
Frozen peaches can be used if fresh are out of season—just thaw and drain first.
This dish pairs perfectly with coconut rice or a crisp green salad.
