Description

Ina Garten’s Chicken Marbella is a flavor-packed, sweet-and-savory chicken dish featuring juicy thighs marinated with olives, prunes, capers, and herbs. Perfect for dinner parties or easy weeknight meals!

For Marinade & Chicken:

  • 1 whole chicken (about 3 ½ lbs), cut into 8 pieces (or 8 bone-in chicken thighs)

  • 2 cups pitted green olives (e.g., Castelvetrano), chopped

  • 1 cup pitted prunes, chopped

  • ¼ cup capers, drained

  • ½ cup red wine vinegar

  • 1 cup dry white wine (Sauvignon Blanc or similar)

  • ½ cup olive oil

  • 6 cloves garlic, minced

  • 1 tablespoon dried oregano

  • 1 teaspoon ground cumin

  • 1 tablespoon fresh parsley, chopped (for garnish)

For Topping:

  • 2 tablespoons brown sugar

  • ¼ cup fresh Italian parsley, chopped (for garnish)


Instructions

  1. Marinate the Chicken: In a large bowl or resealable bag, combine olives, prunes, capers, vinegar, wine, olive oil, garlic, oregano, and cumin. Add chicken and toss to coat. Marinate in the fridge for at least 1 hour or preferably overnight.

  2. Preheat Oven: Preheat to 375°F (190°C). Line a large baking dish or roasting pan with parchment or lightly grease it.

  3. Assemble & Roast: Arrange chicken in the dish in a single layer. Pour the marinade over the top. Sprinkle with brown sugar. Roast for 45–55 minutes, or until chicken reaches 165°F internal temp and skin is golden.

  4. Garnish & Serve: Remove from oven and sprinkle with fresh parsley. Spoon the rich sauce over each serving.

Notes

For extra flavor, marinate overnight.
Substitute prunes with dried apricots or figs if needed.
Great served with couscous, rice, or roasted potatoes.
