This Hot Honey Chicken Bowl is a flavorful, fuss-free dinner made with juicy glazed chicken, roasted sweet potatoes, Brussels sprouts, fluffy quinoa, and a drizzle of sweet-spicy hot honey. Finished with creamy feta, this wholesome bowl is perfect for busy weeknights or meal prep!
Ingredients
1 lb chicken breast, cubed
2 cups cooked quinoa
2 cups roasted diced sweet potatoes and Brussels sprouts
1/4 cup hot honey (mix honey with a splash of hot sauce)
1/4 cup crumbled feta cheese
Optional: fresh herbs for garnish (parsley or cilantro)
Instructions
Sear the Chicken: Heat a skillet over medium heat. Add a little oil and cook the cubed chicken until golden and cooked through, about 6–8 minutes. Drizzle with half the hot honey and toss to coat.
Roast the Veggies: While chicken cooks, roast sweet potatoes and Brussels sprouts in a 400°F oven with olive oil, salt, and pepper until tender and caramelized (about 20–25 minutes).
Assemble the Bowls: In a serving bowl, layer cooked quinoa, roasted veggies, and glazed chicken. Drizzle with remaining hot honey, sprinkle with crumbled feta, and garnish with fresh herbs if desired
Notes
Make it spicier by adding crushed red pepper to your hot honey.
Swap quinoa for rice, couscous, or cauliflower rice if preferred.
