For the Honey Mustard Chicken:

  • 2 boneless, skinless chicken breasts

  • 1/4 cup Dijon mustard

  • 2 tablespoons honey

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1/2 teaspoon paprika

  • Salt and black pepper to taste

For the Cheesy Roasted Asparagus:

  • 1 bunch asparagus, trimmed

  • 1 tablespoon olive oil

  • 1/2 teaspoon garlic powder

  • Salt and pepper to taste

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

  2. In a small bowl, whisk together Dijon mustard, honey, olive oil, garlic, paprika, salt, and pepper.

  3. Place chicken breasts on one side of the baking sheet. Spoon the honey mustard sauce over each piece generously.

  4. On the other side of the sheet, place trimmed asparagus. Drizzle with olive oil, sprinkle with garlic powder, salt, and pepper. Toss to coat.

  5. Bake for 20–25 minutes or until chicken reaches 165°F internally and asparagus is tender.

  6. Remove from oven, sprinkle cheeses over asparagus, and return to oven for 3–5 minutes until melted and bubbly.

  7. Serve hot with an extra drizzle of sauce if desired!
