Description

This Honey Lime Chicken is the ultimate sweet and tangy dinner recipe. Juicy chicken thighs are seared (or baked!) to golden perfection and coated in a sticky honey-lime glaze with a kick of chili. Ready in under 30 minutes, it’s the perfect weeknight go-to meal that feels special without the stress.


Ingredients

  • pounds (680 g) boneless, skinless chicken thighs

  • ¾ teaspoon kosher salt

  • ½ teaspoon ground black pepper

  • ½ teaspoon chili powder

  • 2 tablespoons (30 ml) olive oil, divided (not extra virgin)

  • 2 cloves garlic, minced

  • ½ cup (120 ml) honey

  • 2 tablespoons (30 ml) soy sauce

  • Juice and zest of 2 limes

  • ¼ teaspoon red pepper flakes

  • Fresh cilantro for garnish (optional)


Instructions

  1. Season the chicken thighs with salt, pepper, and chili powder. Drizzle with 1 tablespoon olive oil and toss to coat.

  2. Heat remaining 1 tablespoon olive oil in a large 12-inch skillet over medium-high heat.

  3. Add chicken in a single layer and sear for 5–6 minutes per side until golden and cooked through (165°F internal temperature). Remove from skillet and set aside.

  4. In the same skillet, sauté garlic for 30 seconds. Add ¼ cup of water and deglaze the pan, scraping up any browned bits.

  5. Stir in honey, soy sauce, lime juice and zest, and red pepper flakes. Simmer over medium-low heat for 2–3 minutes until slightly thickened.

  6. Return chicken to skillet and coat in sauce. Remove from heat and garnish with fresh cilantro.

  7. Serve warm with extra sauce spooned over the top.

Notes

Swap chicken thighs for boneless breasts if preferred—just adjust cooking time as needed.
For extra heat, increase the red pepper flakes.
Leftovers keep well in the fridge for up to 3 days. Reheat gently with a splash of water.
