Ingredients
For the Chicken:
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup honey
1/4 cup lime juice
1 tablespoon soy sauce
1 teaspoon minced garlic
1 teaspoon grated ginger
Salt and pepper to taste
For the Rice:
1 cup white rice
1 1/2 cups water
1/4 teaspoon salt
1 avocado, peeled and diced
1/4 cup cilantro, chopped
1/4 cup red onion, diced
1 lime wedge
Instructions
Marinate the Chicken: In a bowl, whisk together honey, lime juice, soy sauce, garlic, ginger, salt, and pepper. Add the chicken, toss to coat, cover, and let marinate for 20 minutes (or up to overnight).
Cook the Rice: In a saucepan, bring rice, water, and salt to a boil. Reduce heat, cover, and simmer for 18 minutes. Remove from heat and let sit, covered, for 5 minutes.
Add Fresh Ingredients: Fluff rice with a fork, then stir in diced avocado, chopped cilantro, and red onion. Squeeze lime juice over the top and gently toss.
Cook the Chicken: Heat a skillet over medium heat. Add chicken (and some marinade) and cook for 7–10 minutes until cooked through and golden.
Assemble the Stack: Spoon the rice mixture into a bowl or plate. Top with the honey lime chicken and garnish with more cilantro or a lime wedge if desired. Enjoy!
Notes
Want a spicy kick? Add a pinch of red pepper flakes or sliced jalapeños to the marinade.
