  • 1 avocado, peeled and diced

Instructions

  1. Marinate the Chicken: In a bowl, whisk together honey, lime juice, soy sauce, garlic, ginger, salt, and pepper. Add the chicken, toss to coat, cover, and let marinate for 20 minutes (or up to overnight).

  2. Cook the Rice: In a saucepan, bring rice, water, and salt to a boil. Reduce heat, cover, and simmer for 18 minutes. Remove from heat and let sit, covered, for 5 minutes.

  3. Add Fresh Ingredients: Fluff rice with a fork, then stir in diced avocado, chopped cilantro, and red onion. Squeeze lime juice over the top and gently toss.

  4. Cook the Chicken: Heat a skillet over medium heat. Add chicken (and some marinade) and cook for 7–10 minutes until cooked through and golden.
