Instructions

Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.

Slice sweet potatoes into ½-inch thick rounds, keeping slices as even as possible.

Toss sweet potato rounds with olive oil, salt, and pepper until well coated.

Arrange rounds in a single layer on the baking sheet without overlapping.

Roast for 20–25 minutes, flipping halfway through, until golden and lightly crisp on the edges.
