Description

Honey Feta Sweet Potato Rounds are roasted until perfectly caramelized, then drizzled with warm honey and topped with tangy feta and herbs. This easy side dish is sweet, savory, and always a crowd-pleaser.


Ingredients

  • 2 large sweet potatoes, scrubbed clean

  • 2 tablespoons olive oil

  • Salt, to taste

  • Black pepper, to taste

  • 1 tablespoon honey, warmed

  • 1/3 cup crumbled feta cheese

  • 1 teaspoon fresh thyme leaves (optional)

  • Red pepper flakes, to taste (optional)


Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.

  2. Slice sweet potatoes into ½-inch thick rounds, keeping slices as even as possible.

  3. Toss sweet potato rounds with olive oil, salt, and pepper until well coated.

  4. Arrange rounds in a single layer on the baking sheet without overlapping.

  5. Roast for 20–25 minutes, flipping halfway through, until golden and lightly crisp on the edges.

  6. Warm the honey until easy to drizzle.

  7. Drizzle honey over hot sweet potato rounds, then immediately sprinkle with feta, thyme, and red pepper flakes if using.

  8. Serve warm and enjoy.

Notes

For extra crisp edges, avoid overcrowding the pan.
Goat cheese or whipped feta can be used instead of crumbled feta.
