- ½ cup honey
- ¼ cup balsamic vinegar
- 1 cup fresh or dried cranberries
- ½ cup crumbled feta cheese
- 1 tsp dried thyme or rosemary
- Fresh parsley, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Pat chicken breasts dry and season both sides with salt and black pepper.
- In a bowl, whisk together honey, balsamic vinegar, and thyme (or rosemary).
- Arrange chicken in the baking dish. Pour the honey mixture evenly over the chicken. Scatter cranberries on top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 15–20 minutes, or until chicken reaches 165°F internally.
- Sprinkle crumbled feta over the top and return to the oven for 5 minutes, until slightly softened.
- Optional: Broil for 2–3 minutes for a lightly golden finish.
- Let rest for 5 minutes before serving. Garnish with parsley if desired.
