Ingredients
1 pound chicken thighs or breasts
2 chipotle peppers in adobo sauce
3 tablespoons honey
1 garlic clove
Juice of 1 lime
2 cups cooked white or brown rice
1 avocado, sliced
1 cup cherry tomatoes, halved
1 cup corn kernels (fresh, frozen, or canned)
Fresh cilantro, for garnish
Optional toppings: shredded cheese, sour cream, jalapeños, hot sauce
Instructions
Make the Chipotle Sauce:
Blend chipotle peppers, 1 tablespoon of adobo sauce, honey, garlic, and lime juice until smooth.Marinate the Chicken:
