  • 2 chipotle peppers in adobo sauce

  • 3 tablespoons honey

  • 1 garlic clove

  • Juice of 1 lime

  • 2 cups cooked white or brown rice

  • 1 avocado, sliced

  • 1 cup corn kernels (fresh, frozen, or canned)

  • Fresh cilantro, for garnish

Instructions

  1. Make the Chipotle Sauce:
    Blend chipotle peppers, 1 tablespoon of adobo sauce, honey, garlic, and lime juice until smooth.

  2. Marinate the Chicken:
    Pour half the sauce over the chicken and marinate for at least 20 minutes.
