Ingredients
-
1 lb boneless, skinless chicken thighs
-
1 cup long-grain rice
-
2 cups chicken broth
-
1/2 cup BBQ sauce (your favorite brand)
-
1/4 cup honey
-
1 tsp garlic powder
-
1 tsp onion powder
-
1/2 tsp smoked paprika
-
Salt and pepper, to taste
-
1 cup mixed vegetables (optional)
-
2 tbsp soy sauce
-
1 clove garlic, minced
-
Chopped green onions, for garnish
Instructions
-
Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
-
In a large skillet over medium heat, sear chicken thighs for 3–4 minutes per side until golden. Remove and set aside.
-
In a small bowl, whisk together BBQ sauce, honey, soy sauce, and minced garlic.
-
In the same skillet, toast the uncooked rice for 1–2 minutes until lightly golden.
-
Add chicken broth and half of the honey BBQ sauce mixture. Stir to combine.
-
Return chicken to the pan. Pour the remaining sauce over the top.
-
Cover and simmer on low heat for 15 minutes.
-
Add mixed vegetables (if using), cover again, and cook for an additional 5 minutes or until rice is tender and chicken is cooked through.
-
Let rest for 5 minutes. Fluff rice, garnish with chopped green onions, and serve hot.
Notes
You can use chicken breasts instead of thighs; just adjust cooking time to avoid drying out.
Add a splash of extra broth when reheating leftovers to keep rice moist.
Frozen veggies work great—no need to thaw before adding!
For extra heat, stir in a pinch of chili flakes or a splash of hot sauce.
