Instructions

In a mixing bowl, combine powdered sugar, softened butter, peppermint extract, and heavy cream. Mix until a smooth, slightly stiff dough forms.

Scoop about 1 teaspoon of filling, roll it into a ball, and flatten into a disc. Place on a parchment-lined baking sheet.

Freeze patties for 20 minutes to firm up.

In a microwave-safe bowl, melt the chocolate and vegetable oil in 30-second intervals, stirring until smooth.

Dip each chilled peppermint disc into the chocolate using a fork. Shake off excess chocolate and place back on the tray.

Notes
For a stronger mint flavor, add an extra ¼ teaspoon of peppermint extract.
If the dough feels too sticky, mix in 1–2 tablespoons more powdered sugar.
