Homemade Ground Beef Pasta Soup is a cozy, one-pot comfort meal made with tender macaroni, savory ground beef, and veggies simmered in a rich tomato broth—perfect for busy weeknights.
Ingredients

1 lb ground beef

1 cup chopped onion

6 cups beef broth

14 oz diced tomatoes (with juices)

2 tbsp tomato paste

1 tsp Worcestershire sauce

1 tsp dried oregano

½ tsp dried basil

½ tsp garlic powder

1 bay leaf

1¾ cups macaroni

1½ cups frozen mixed vegetables

Salt and pepper, to taste
Instructions

Heat a large pot or Dutch oven over medium-high heat. Add ground beef and onion, cooking until beef is browned and onion is softened. Drain excess fat.

Stir in tomato paste and cook for 1–2 minutes to deepen flavor.

Add beef broth, diced tomatoes, Worcestershire sauce, oregano, basil, garlic powder, and bay leaf. Stir well.

Bring to a boil, then reduce heat and simmer for 5 minutes.

Add macaroni and frozen vegetables. Simmer uncovered for 8–10 minutes, stirring occasionally, until pasta is tender.

Remove bay leaf, season with salt and pepper, and serve hot.
Notes
Soup thickens as it sits; add extra broth when reheating if needed.
Small pasta shapes work best for even cooking.
