Ingredients
-
4 boneless, skinless chicken breasts
-
1 package (5.2 oz) Boursin cheese (Garlic & Fine Herbs or any preferred flavor)
-
1 cup panko breadcrumbs
-
½ cup grated Parmesan cheese
-
2 tablespoons fresh parsley, finely chopped
-
1 tablespoon fresh thyme, chopped
-
1 tablespoon fresh rosemary, chopped
-
2 tablespoons olive oil
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
½ teaspoon salt
-
½ teaspoon black pepper
-
3 tablespoons melted butter
Instructions
-
Preheat oven to 375°F (190°C) and lightly grease a baking dish.
-
In a shallow bowl, mix panko, Parmesan, parsley, thyme, rosemary, garlic powder, onion powder, salt, and pepper.
-
Cut a small pocket into each chicken breast, being careful not to slice through.
-
Stuff each pocket with 1–2 tablespoons of Boursin, pressing gently to secure.
-
Use a toothpick to close the opening if needed.
-
Brush the chicken with olive oil, then press into the breadcrumb mixture to coat fully.
-
Place the chicken in the baking dish and drizzle melted butter over the top.
-
Bake for 30–35 minutes, until the crust is golden and the chicken reaches 165°F (74°C).
-
Rest a few minutes, remove toothpicks, and serve warm.
Notes
-
Make sure the Boursin is cold before stuffing for easier handling.
-
Add a squeeze of lemon for a bright finishing touch.
-
Pairs perfectly with roasted vegetables, mashed potatoes, or a light salad.
