Description

For the Hawaiian Chicken

  • 4 boneless, skinless chicken breasts

  • 1 cup pineapple juice

  • ⅓ cup soy sauce

  • ¼ cup brown sugar

  • 2 tablespoons vegetable oil

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced

  • ½ teaspoon black pepper

For the Coconut Rice

  • 1½ cups jasmine rice

  • 1 cup coconut milk

  • 1 cup water

  • ½ teaspoon salt

For Garnish

  • Sliced green onions

  • Sesame seeds

  • Grilled pineapple slices (optional)


Instructions

  1. In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, oil, garlic, ginger, and black pepper until smooth.

  2. Add chicken breasts and coat well. Cover and refrigerate for at least 1 hour or overnight for best flavor.

  3. Preheat grill or grill pan to medium-high heat. Remove chicken from marinade and discard used marinade.

  4. Grill chicken for 6–7 minutes per side, or until internal temperature reaches 165°F. Rest for 5 minutes, then slice.

  5. While chicken cooks, combine rice, coconut milk, water, and salt in a saucepan.

  6. Bring to a boil, reduce heat to low, cover, and simmer for 15–20 minutes until rice is tender.

  7. Fluff rice with a fork and let sit covered for 5 minutes.

  8. Serve sliced chicken over coconut rice and garnish with green onions, sesame seeds, and pineapple.

Notes

Chicken thighs can be used for extra juiciness.

No grill? A skillet or grill pan works perfectly.

For extra sauce, make a fresh batch of the marinade and simmer it until slightly thickened.

Leftovers store well for up to 4 days in the refrigerator.
