Description

Ground Turkey and Zucchini Skillet is a quick, healthy dinner bursting with savory flavor, tender zucchini, and lean turkey. Ready in just 30 minutes, it’s perfect for busy weeknights!


Ingredients

  • 1 tbsp olive oil

  • ½ onion, finely chopped

  • 2 cloves garlic, minced

  • 1 lb ground turkey

  • 2 medium zucchinis, sliced into ¼-inch half-moons

  • 1 tsp dried oregano

  • ¾ tsp salt (or to taste)

  • ½ tsp black pepper

  • ¼ tsp crushed red pepper flakes (optional)

  • ⅓ cup chicken broth

  • ⅓ cup grated Parmesan cheese

  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add chopped onion and sauté for 3-4 minutes until soft and translucent.

  3. Stir in minced garlic and cook for 30 seconds until fragrant.

  4. Add ground turkey, breaking it up with a spoon, and cook 6-8 minutes until browned and no longer pink.

  5. Add sliced zucchini and stir well. Cook for 4-5 minutes until zucchini begins to soften but stays slightly crisp.

  6. Sprinkle in dried oregano, salt, black pepper, and crushed red pepper flakes if using.

  7. Pour in chicken broth and stir to combine. Reduce heat to low and simmer for 3-4 minutes.

  8. Stir in grated Parmesan cheese until melted and creamy.

  9. Taste and adjust seasoning as needed.

  10. Serve hot, garnished with extra Parmesan or fresh parsley if desired.

Notes

Chop the zucchini smaller if you have picky eaters—they might not even notice it’s there!
Adjust the crushed red pepper for more or less heat.
Delicious over rice, pasta, cauliflower rice, or enjoyed on its own for a low-carb meal.
Leftovers keep well for up to 3 days in the fridge.
