Ingredients
Crust

1 cup Oreo crumbs

2 1/2 tbsp butter, melted

2 (8 oz) blocks cream cheese, softened

1/2 cup sugar

2 eggs

1 tsp vanilla extract

Instructions

Preheat oven to 350°F. Line a cupcake pan with paper liners.

Pulse 10–11 Oreos in a food processor until finely crumbed. Add melted butter and pulse again to combine.

Divide the crumbs into each liner and press firmly to form the crust.

In a medium bowl, beat cream cheese and sugar together until smooth.

Add eggs and vanilla; mix until just combined.

Add neon green food coloring until your desired Grinch shade is reached.

Spoon about 1/4 cup of cheesecake batter into each cupcake liner.

Bake for 15–17 minutes, until the centers are slightly jiggly.

Cool completely in the pan, then refrigerate until firm.

Notes
Make sure the cream cheese is completely softened for a smooth, creamy cheesecake texture.
For a deeper green color, add food coloring slowly until you reach the perfect Grinch hue.
