Ingredients
For the Steak & Zucchini

1 steak (ribeye, sirloin, or NY strip)

2–3 zucchinis, sliced into rounds

1–2 tbsp olive oil
For the Creamy Herb Sauce

½ cup sour cream or Greek yogurt

1 tbsp Dijon mustard

1–2 tbsp chopped chives or parsley

Pinch garlic powder

Salt & pepper to taste
For the Bowl Base

2–3 cups cooked rice or mashed potatoes
Instructions

Prep the Steak: Pat dry and season both sides with salt, pepper, garlic powder, and onion powder. Let rest for 15–20 minutes.

Make the Sauce: Whisk sour cream or yogurt, Dijon mustard, herbs, garlic powder, salt, and pepper. Refrigerate to blend flavors.

Grill the Zucchini: Toss zucchini rounds with olive oil, salt, and pepper. Grill 2–3 minutes per side until charred and tender.

Sear the Steak: Heat a grill pan or cast iron skillet over medium-high. Add olive oil, sear steak 3–4 minutes per side for medium-rare. Rest 5–10 minutes, then slice against the grain.

Assemble the Bowl: Add rice or mashed potatoes to a bowl. Top with grilled zucchini and sliced steak. Drizzle generously with the creamy herb sauce. Add extra herbs if desired.
