Description

This Grilled Steak Bowl with Sauce and Zucchini is a flavor-packed, comforting dinner made with juicy grilled steak, smoky zucchini, and a creamy herb sauce over fluffy rice. Perfect for busy weeknights when you want something satisfying, fresh, and incredibly delicious.


Ingredients

For the Steak & Zucchini

  • 1 steak (ribeye, sirloin, or NY strip)

  • Salt & pepper

  • Garlic powder

  • Onion powder

  • 23 zucchinis, sliced into rounds

  • 12 tbsp olive oil

For the Creamy Herb Sauce

  • ½ cup sour cream or Greek yogurt

  • 1 tbsp Dijon mustard

  • 12 tbsp chopped chives or parsley

  • Pinch garlic powder

  • Salt & pepper to taste

For the Bowl Base

  • 23 cups cooked rice or mashed potatoes


Instructions

  1. Prep the Steak: Pat dry and season both sides with salt, pepper, garlic powder, and onion powder. Let rest for 15–20 minutes.

  2. Make the Sauce: Whisk sour cream or yogurt, Dijon mustard, herbs, garlic powder, salt, and pepper. Refrigerate to blend flavors.

  3. Grill the Zucchini: Toss zucchini rounds with olive oil, salt, and pepper. Grill 2–3 minutes per side until charred and tender.

  4. Sear the Steak: Heat a grill pan or cast iron skillet over medium-high. Add olive oil, sear steak 3–4 minutes per side for medium-rare. Rest 5–10 minutes, then slice against the grain.

  5. Assemble the Bowl: Add rice or mashed potatoes to a bowl. Top with grilled zucchini and sliced steak. Drizzle generously with the creamy herb sauce. Add extra herbs if desired.
