  • For the Grains:

    • 1 cup quinoa, rice, or farro (dry)

  • For the Creamy Sauce:

    • ½ cup sour cream or Greek yogurt

    • 1 tbsp Dijon mustard

    • ½ tsp garlic powder

    • ½ tsp smoked paprika

    • Salt, to taste

    • Splash of water, if needed

    • 2 tbsp chopped fresh parsley or chives

  • Optional Garnish:

    • Extra fresh herbs


Instructions

  1. Prep the Steak:
    Pat steak dry. Rub with 1 tbsp olive oil, garlic powder, smoked paprika, salt, and black pepper. Let sit at room temp for 20 minutes.

  2. Preheat Grill:
    Heat grill or grill pan to high.

  3. Grill Zucchini:
    Toss zucchini with 1 tbsp olive oil and salt. Grill 2–3 minutes per side until tender and charred.

  4. Grill Steak:
    Grill steak 4–5 minutes per side for medium-rare, adjusting for thickness. Rest 5 minutes, then slice.

  5. Cook Grains:
    Prepare grains according to package instructions. Fluff and keep warm.

  6. Make Sauce:
    Mix sour cream (or Greek yogurt), Dijon, garlic powder, smoked paprika, salt, and water (if needed). Stir in parsley or chives.

  7. Assemble Bowls:
    Add grains to bowls. Top with zucchini and steak. Drizzle with sauce and sprinkle extra herbs if desired.

Notes

For extra kick, add chili flakes or lemon juice to the sauce.
Swap zucchini for bell peppers, asparagus, or mushrooms.
