Description

Juicy Grilled Mango Chicken marinated in fresh mango, lime, garlic, and warm spices, then grilled to smoky perfection and topped with bright mango salsa. This sweet and savory chicken dinner is easy enough for weeknights but impressive enough for guests.

For the Mango Marinade

  • 4 boneless, skinless chicken breasts
  • 2 ripe mangoes, peeled and diced
  • Juice of 2 limes
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and black pepper to taste

For the Fresh Mango Salsa (Optional but Recommended)

 

  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Prepare the Marinade:
    In a large bowl, combine diced mangoes, lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper. Mix well.
  2. Marinate the Chicken:
    Place chicken breasts in a resealable bag or shallow dish. Pour marinade over chicken and coat evenly. Refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the Grill:
    Heat grill to medium-high (about 400°F). Lightly oil grates to prevent sticking.
  4. Grill the Chicken:
    Remove chicken from marinade and discard excess marinade. Grill for 6–7 minutes per side, or until internal temperature reaches 165°F.
  5. Rest the Chicken:
    Let chicken rest for 5 minutes before slicing to keep it juicy.
  6. Prepare the Mango Salsa:
    In a bowl, mix diced mango, red onion, bell pepper, jalapeño, lime juice, cilantro, and salt. Adjust seasoning to taste.
  7. Serve:
    Top grilled chicken with fresh mango salsa and serve with rice, salad, or grilled vegetables.

Notes

  • For extra smoky flavor, add ½ teaspoon smoked paprika to the marinade.
  • Chicken thighs can be used instead of breasts; adjust cooking time as needed.
  • If you don’t have a grill, cook in a grill pan or bake at 425°F until internal temperature reaches 165°F.
  • Let the salsa sit for 10–15 minutes before serving to allow flavors to blend.
