Ingredients

    • 2 boneless, skinless chicken breasts

    • 2 cups broccoli florets

    • 1 tablespoon olive oil

    • Salt and pepper, to taste

For the Creamy Garlic Sauce:

    • ½ cup Greek yogurt

    • 2 cloves garlic, minced

    • 1 tablespoon lemon juice

    • Salt and pepper, to taste


Instructions

  1. In a bowl, combine olive oil, salt, and pepper. Add chicken breasts and coat thoroughly. Let marinate for 15 minutes.

  2. Meanwhile, steam or microwave broccoli florets until bright green and tender, about 3–5 minutes.

  3. Heat grill or grill pan over medium-high heat. Grill chicken for 6–7 minutes per side, or until internal temperature reaches 165°F (75°C).

  4. While chicken cooks, prepare creamy garlic sauce by mixing Greek yogurt, minced garlic, lemon juice, salt, and pepper in a small bowl until smooth.

  5. Allow grilled chicken to rest for a couple of minutes, then slice.

  6. To serve, place steamed broccoli in bowls, top with sliced grilled chicken, and drizzle generously with creamy garlic sauce. Enjoy!

Feel free to swap broccoli for other veggies like asparagus, snap peas, or bell peppers.
