Description

These grilled boneless chicken thighs are marinated in a zesty homemade green goddess sauce packed with fresh herbs, garlic, and a touch of honey. Juicy, flavorful, and perfect for backyard barbecues or easy weeknight dinners.

For the Chicken:

  • 2 lbs boneless, skinless chicken thighs (air-chilled recommended)

Green Goddess Marinade & Sauce:

  • ¼ cup fresh chives

  • ¼ cup fresh basil

  • ¼ cup fresh parsley

  • 12 tablespoons fresh dill (optional or to taste)

  • 2 cloves garlic, minced

  • 2 tablespoons distilled white vinegar

  • 2 tablespoons lemon juice

  • ½ cup extra virgin olive oil (or avocado oil)

  • ¼ cup mayonnaise (such as Chosen Foods Avocado Oil Mayo)

  • 1 tablespoon honey (or sub with maple syrup or 1 tsp white sugar)

  • Salt and pepper to taste


Instructions

  1. Make the marinade: In a tall container or food processor, blend all ingredients except the oil until smooth. Slowly drizzle in the oil while blending to emulsify. Separate the marinade into two portions—about ⅓–½ cup for marinating and the rest for sauce.

  2. Marinate the chicken: Add chicken thighs to a zip-top bag or shallow dish. Pour in marinade and coat evenly. Marinate for at least 2 hours or up to 24 hours in the fridge.

  3. Grill: Preheat grill to 400°F. Remove chicken from fridge 10 minutes before grilling. Clean and oil grill grates. Shake off excess marinade and grill thighs for 5–6 minutes on the first side with the lid closed.

  4. Flip and finish: Turn chicken and grill for another 4–5 minutes or until internal temperature reaches 165°F. Let rest 5 minutes before serving.

  5. Serve: Drizzle reserved green goddess sauce over chicken and garnish with extra herbs if desired.

Notes

Air-chilled chicken gives a better sear and flavor.
The sauce doubles as both marinade and topping—just be sure to separate it before marinating!
Can be made with chicken breasts, though thighs stay juicier on the grill.
Leftovers are amazing in wraps, salads, or sandwiches.
