Ingredients

8 to 10 boneless skinless chicken thighs or breasts

1 cup Greek yogurt, plain, full-fat

3 to 4 sprigs fresh dill

1 shallot, minced

3 tablespoons minced garlic

1 lemon, juiced and zested

1 teaspoon salt

½ teaspoon pepper
-
1 teaspoon paprika

1 tablespoon dried oregano
Instructions

Pat chicken thighs dry with a paper towel and set aside.

In a mixing bowl, combine Greek yogurt, dill, shallot, garlic, lemon juice and zest, salt, pepper, paprika, and oregano.

Add chicken to the bowl and coat evenly with marinade. Cover and refrigerate for at least 1 hour or overnight.

Preheat grill to 400°F.

Grill chicken thighs on direct heat for 8–10 minutes, flipping halfway through with lid closed between flips.

Remove from grill and rest for 5 minutes before serving. Optional: cover with foil while resting.
Notes
For even more flavor, marinate overnight.
No grill? Bake at 425°F for 25–30 minutes or pan-sear on medium-high.
Serve with rice, salad, or warm pita and tzatziki.
Use chicken breasts if preferred, but adjust cook time accordingly.
