Description
This Greek Marinated Chicken is bursting with Mediterranean flavor thanks to a creamy yogurt, lemon, and garlic marinade. Juicy, tender, and perfect for grilling, baking, or pan-searing—it’s an easy weeknight dinner you’ll crave again and again.
Ingredients
4 boneless, skinless chicken breasts
½ cup plain Greek yogurt
¼ cup olive oil
3 cloves garlic, minced (or 1 tsp garlic powder)
Zest and juice of 2 lemons
1 tsp dried oregano
1 tsp onion powder
½ tsp ground coriander
1 tsp sea salt
½ tsp cracked black pepper
Instructions
In a large mixing bowl, whisk together Greek yogurt, olive oil, lemon zest and juice, garlic, oregano, onion powder, coriander, salt, and pepper.
Optional: Reserve ½ cup of the marinade in a separate bowl for basting.
Add chicken breasts to the marinade and coat well. Cover and refrigerate for at least 30 minutes or up to 24 hours.
Remove chicken from fridge 30 minutes before cooking to bring to room temperature.
Preheat oven to 400°F. Heat a grill pan over medium-high heat and oil lightly.
Sear chicken on one side for 5 minutes, flip, then transfer pan to oven. Bake for 15 minutes or until internal temperature reaches 165°F.
Let rest for 5 minutes before slicing and serving.
Notes
You can use thighs or drumsticks instead of breasts; just adjust cook time accordingly.
To grill: Pound chicken to 1-inch thickness and grill over medium heat for 5–7 minutes per side.
To bake: Place in baking dish and cook at 400°F for 20–25 minutes.
To pan-fry: Sear each side in a skillet over medium-high heat for about 5 minutes.
