  • ¼ tsp coarse black pepper

Chicken

  • 1 pound thin-sliced chicken breast

Garnish

  • ¼ cup feta cheese, crumbled

  • ¼ cup fresh chopped parsley

  • Additional lemon wedges, for serving


Instructions

  1. Make the Marinade:
    In a large mixing bowl, whisk together the lemon juice and zest, olive oil, garlic, oregano, paprika, salt, and pepper until well combined. Reserve ¼ cup of the marinade for later.

  2. Marinate the Chicken:
    Add chicken to the bowl with the remaining marinade. Toss to coat evenly. Cover with plastic wrap and refrigerate for 30 minutes.

  3. Cook the Chicken:
    Heat a nonstick skillet over medium-high heat. Drizzle in olive oil and sear chicken until golden brown on one side (about 3-4 minutes). Flip and cook for another 3-4 minutes, until fully cooked and juices run clear.

  4. Finish and Serve:
    Transfer chicken to a serving plate. Drizzle with reserved marinade. Top with crumbled feta and chopped parsley. Add lemon wedges on the side and serve warm.

Notes

Don’t worry if the garlic gets a little crispy—it adds a toasty, caramelized flavor that elevates the dish. If the sauce separates slightly, just stir it before drizzling over the chicken. This recipe is great served over rice, couscous, or with a fresh Greek salad!
