Ingredients
Marinade
1 lemon, juiced and zested
¼ cup extra virgin olive oil
3 garlic cloves, finely minced (or 1 tsp garlic powder)
1 tsp dried oregano
½ tsp smoked paprika
½ tsp + a pinch of sea salt
¼ tsp coarse black pepper
Chicken
1 pound thin-sliced chicken breast
Garnish
¼ cup feta cheese, crumbled
¼ cup fresh chopped parsley
Additional lemon wedges, for serving
Instructions
Make the Marinade:
In a large mixing bowl, whisk together the lemon juice and zest, olive oil, garlic, oregano, paprika, salt, and pepper until well combined. Reserve ¼ cup of the marinade for later.Marinate the Chicken:
Add chicken to the bowl with the remaining marinade. Toss to coat evenly. Cover with plastic wrap and refrigerate for 30 minutes.Cook the Chicken:
Heat a nonstick skillet over medium-high heat. Drizzle in olive oil and sear chicken until golden brown on one side (about 3-4 minutes). Flip and cook for another 3-4 minutes, until fully cooked and juices run clear.Finish and Serve:
Transfer chicken to a serving plate. Drizzle with reserved marinade. Top with crumbled feta and chopped parsley. Add lemon wedges on the side and serve warm.
