Greek Chicken

  • lbs chicken tenders or chicken breasts, cut into strips

  • ¼ cup Greek yogurt

  • ¼ cup olive oil

  • 2 tbsp red wine vinegar

  • 1 tbsp dried Mediterranean oregano

  • 1 tsp granulated garlic

  • 1 tsp onion powder

  • ½ tsp ground cumin

  • 1½ tsp kosher salt

  • ½ tsp freshly ground black pepper

Tzatziki Sauce

  • 1 cup Greek yogurt

  • 2 baby cucumbers, grated

  • 1 tbsp chopped fresh dill

  • ½ tsp ground cumin

  • ½ tsp lemon zest

  • 1 tbsp olive oil

  • Kosher salt and pepper, to taste

For Assembling

  • 4 pitas, warmed

  • 2 cups shredded lettuce

  • ¼ cup pickled red onions

  • 2 baby cucumbers, diced

  • 1 beefsteak tomato, diced

  • 2 oz feta cheese, crumbled


Instructions

  1. Marinate Chicken:
    In a large bowl, whisk together Greek yogurt, olive oil, vinegar, and all spices for the marinade. Add chicken and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 24 hours.

  2. Grill Chicken:
    Preheat grill or grill pan over medium-high heat. Cook chicken for about 5 minutes per side or until internal temperature reaches 165°F.

  3. Prepare Tzatziki:
    Combine Greek yogurt, grated cucumber (squeeze out excess water), dill, cumin, lemon zest, and olive oil. Stir until smooth. Season with salt and pepper to taste. Chill until ready to use.

  4. Assemble Gyros:
    Place grilled chicken in warm pitas. Top with lettuce, tomatoes, cucumbers, pickled onions, feta, and a generous dollop of tzatziki. Serve immediately!
